1) A non monotonous gameplay is a good motivation to continue playing. Giving the player access to a variety of methods and letting him/her use it is one. Some RPG games force the player to use a single, overpowered spell/character spoils the fun. Ideally, an enjoyable game is one who grants player to different methods that can be used against specific enemies and not just a super skill that can defeat all of them.

2) Probably FFT, since even random battles are enjoyable. Each class fulfills a specific role for the party (except orlandu) and a fairly good grasp of the game mechanics is required to achieve victory.

3) Anything that is enjoyable and doesn't feel like a chore is more than enough for me.
