If you mean RoC version of Priest then go to Object Editor/Human/Melee/Units/Priest/Change Model file-Extra Versions and Tick reign of chaos instead of frozen throne and you'll have the old look of the priest my friend.

It's near the top when you find the unit in the object editor.
It says: Art - Model File Extra Versions as it's full name. But, in my editor it shows Art - Model File Extr... The Frozen Throne

^Because your field tab is too big for it to complete so it shows periods.
Anyways, also try removing the _v1 at the end of the model path.
