Level required is the field that determines whether an ability is an ultimate right? Setting it to a number higher than 6 enables the ability to stun magic immune units?
It is true. The level must be 6 or higher to be considered as ultimate and do as you said.
Spell Breakers are spell immune, and you can not target them with normal Storm Bolt. But if you set Storm Bolt's required level to 6, you can cast it on a Spell Breaker and it will get stunned.
It's actually anything higher than 1. An ability with a required level of 2 is also considered an "ultimate".
Fun fact: converting a hero ability with a required level of 2 or more into a unit ability still retains the required level and lets it pierce magic immunity.
Does Channel then work with Spell Shield (if not Universal)? So the trigger connected to the given Channel spell will be canceled upon casting on a Spell Shielded unit?
