How to use Dialogs?

Okay, today I tried to change the way a mode is chosen on my map.
I want to choose the mode, via that window, with the buttons.
I think that's a "Dialog", if I'm not mistaking.

However, when I select "Create Dialog" - it takes 2 arguments - a dialog, and a title. So to create a dialog I need a dialog? o_O

Can you please explain how exactly do I create these dialogs properly? xP
How do I configure how many buttons they have, and what's written in them?


And 1 more question - I put some info about the map in the Quest section.
However, when I go there, only half of the text field is visible. The 1-st half is for the quest's requirements, but I just want to explain some stuff there, I don't want it to be an actual quest.
How do I make the text take all of the field, instead of just the bottom half?
