Realistic stabbing in movies?

In the movie 300 when they stab someone with a sword or spear it looks very real like it is going in them but how do they do it?
When i was watching the making of 300 when they were stabbing someone they did it with half the sworst cut off. But in the movie when they stab them they have the whole sword... How do they do it?
