As in selecting the destructable or doodad and pressing ctrl + Page Up or ctrl + Page Down?

Or select the doodad/destructable and go to Edit -> Nudge Selection ->

A nice list of things ;)

Or do you mean that you are coppying doodads/destructables and when you paste them their z height is gone?

Advanced -> uncheck Reset Fixed Object Heights

Did you also know that you can copy a group of doodads and then paste them in different angles while they keep their Fixed Object Heights when unchecked?

Copy Ctrl + C
Paste Ctrl + V
Mirror Paste Vertically Ctrl + NumPad +
Mirror Paste Horizontally Ctrl + Numpad -
Rotate Paste 90 CW Ctrl + Numpad *
Rotate Paste 90 CCW Ctrl + Numpad /

And of course that this can also be done with terrains ^.^? I love this feature...
