I noticed while looking through Blizzard's models that they are made up of multiple pieces. I know this makes UV mapping easier, but does this also make it easier to animate?

The mesh has to be separated to be animatable for Warcraft. At least when using 3DsMax, I have no idea about Milkshape.

Don't worry, I wasn't saying your statement was bad or against any rules, I was just making an observation : )

And usually heroes are a little over 1000 polys, but I don't know what the highest poly unit in Warcraft is.

and the greathall has almost 2500 polies.
the tauren chieftan has less than 500 polies.

try to follow their guidelines.
peon class unit 300polies.
medium sized unit 375polies.
big units or mounted 500polies.
uber unit 525polies.
small building 300polies.
medium building 600polies.
town hall. 800 polies (x 3 800 is 2400 so the great hall fits.)
destructible <100 polies.

Notice those do not include extra stuff that hides and what not like hero glow. Just the base model.
