How would you import a demon hunter.mdx file into model editor and change its body and skins so it looks like a covenant elite?

Import it into model editor by going to Windows->MPQ Browser. Go up to File in that window and select War3x.mpq. Illidan is in Units\Nightelf\EvilIllidan\IllidanEvil.mdx
Then you save it as a .mdl using Save As. Now download Oinkerwinkle's Vertex Modifier at www.oinkerwinkle.com. The rest is up to you, go bonkers with the model!
Here is a tutorial all about modeling:

wait one more thing, how do you exchange the texture of illidan (textures\illidan.blp in the texture manager) to another image and get it to look good (eg. the head wont be at its legs and its sword wont be in its chest)

If you have an imported skin, go to Texture Manager in Magos and right click and select Import. If you want to use an ingame skin, go to the MPQ browser, find your skin, and right click and select use as texture.
Now, go to the Material manager and click around until you find something that says textures\illidan.blp and select that drop down box and select your texture.
