[General] Is there any way to stop a unit playing Spell animation?

No, I don't think so.

Those abilities are unique in that way, they do not cause a pause of any kind.

You could keep track of the current order of the unit, and detect when the ability is being cast with unit begins casting an ability and then order the unit to resume the old order. You might have to play an animation with a trigger. But that still would make the unit twitch a bit.
 
Object Editor -> Units tab -> Choose any unit -> Change its "Art - Animation - Cast Point" to your preferred value.

That value is your "Cast Animation"
If you set it to 0.000 for that unit, so, that unit will have no delay when casting spell (the animation is played) but the spell is fired when the animation is played (obeying the 0.000 value you have set before)
