This is ill-advised to even think about doing. Many updates to flashplayer have patched security problems which hackers could exploit to get malware into your system. Seeing as how such player objects that exploited these problems would stop working after the patch there is a high chance that the websites you are trying to visit are trying to attack your computer with malware.
Also any self-respecting site will have update their flash objects to fix any compatibility problems with newer versions of flash. Come to think of it, flash objects should not need updating for newer versions because flash is designed to be backwards compatible.
In anycase, as a user it is your right to complain at the flash object producers for providing you with incompatible objects that do not play and not adobe for keeping your system safe and improving their product. You should expect them to update their object not you to downgrade your player.
