What does the Hide-action do?

No, the hidden unit has no interaction with the game.. at all. If you have a hero for example and you hide them, then get some ally unit to cast a spell on them (by right clicking the UI button of the hero - left side of the map), it will tell you that that unit is not visible on the map.
Many of us use hidden dummy units to cast spells though

Those are not hidden dummies. Dummies can't be seen because they don't use model. I usually set dummy model to "none.mdl" which will make it completely unselectable (can be selected if it is hero) and invisible (cause it has no model), though it also must be invulnerable, because it still can be hurt by spells. Locust is also needed, so it can go anywhere and through anything.

Hide action hides unit completely and partly pauses it. I have experienced that somehow hidden units manage to cast spells if they start channel before being hidden.

Hidden units are units stored somewhere inside the map, while not being on the map itself. Hidden units are stored in archives that hold its stats and anything else, but hidden units are counted as removed until revealed, reloading all of its stats and original location.

Pretty close, hidden units are moved outside map bounds, thus making them unselectable, and completly unusuable. But that doesn't means that the unit is completly removed from the game.

As for the "hidden" dummies, some of the posts already said what I will .. theres no hidden dummies, they just don't have a valid model path (typing "none.MDL" will make it unselectable), but the unit still can use spells, move and even attack. The missle dummies usually uses Vexorian's popular model "dummy.mdx" which has attachment (origin, chest, overhead), SFX for the missles are attached to these points. Others use the exact model of the missle they need.

Hidden units can cast spells and and attack. But attacked unit will not detect it is being attacked.
But hidden units are much harder to use for spells then dummy units.
