In order to have a walkable doodad you need to make it into a destructible and set walkable to true in the object editor. Otherwise you need to do what Nichilus said and use invisible platforms. They are found under Bridges/Ramps in the doodad palette. There are two different sizes and if you hit 'I' you can see the clicker helper for them (pink and black box) The bottom of the box is how high the doodad is. You can raise them by using ctrl+page up and lower them with crtl+page down. You might also want to hit 'P' to show the pathing so you can tell where your pathing blocker is being placed.
It is also possible to set them to angles, but in order to do it properly you need a visible platform that you set the roll or pitch angle to a negative value. (hold shift when double clicking the field) Once you have it how you want it go to Advanced > Replace Doodads and replace your visible platform with an invisible platform with the same angle. Hopefully this makes a little sense. It takes time to get this just right so I wish you luck!!
