Yea we play it from time to time. And trebuchets are perfect counter for castles also if you are fast enough to send rams before he upgrades murder holes its not that big deal, actually even swordsmen infantry gets bonus damage against buildings but must be spam of them. Now whats OP is gunpowder units, specially ships. And that sounds like really bad AI usually at higher settings he sends armies. My suggestions play against Turks.

In my opinon altough a bit more expensive and with a shorter range, bombard cannons are waay better. Ships arent a problem at all, just build as much demolition ships as you can!
Also if you play with the expansion, infantry can garnison into battering rams for increased speed and protection!

Cant decide between Arbaletists-Hand Cannoners-Heavy horse archers tough :(

Currently im playing the Mongolian campaign so i just rush with hordes of Mangudai (stronger cavalry archers) supported by small squads of hussars and trebuchets. Those persian war elephanths however need 7 voleys of mangudai fire before they drop without a single hit on my boys because of my awesome micro, the problem is that there are dozens of elephants alongside cavaliers and cavalry archers :( Off i go now, to the battlefield again!
