how do you make it so when a player is in the lobby waiting for the game to start they cant change their color? like if there in slot 1 they will always be red, and if there in slot 2 they will always be blue.

Scenario --> Player Properties...
Check the box at the end that says 'Fixed Start Locations' for each player that you want to make those settings unchangeable. This includes changing races.
It's impossible to change only races or color. Both can be changed or none can be changed.
