I'm sorry if there is already a thread about this one
But does anyone know how to make an enemy unit attack a moving specific unit without returning to its original position?
 
Do you mean like, not returning to its guard position?
If so, you could just do something like this for the player in question:
  • AI - Ignore the guard positions of all Player 1 (Red) units
There's other options too, like for specific units, or you can set the guard distance under Advanced -> Gameplay Constants.
