Well for the spells, you just use the Action - Issue Order (Find the Spell you based your Bosses spells on)
So it would look like

Events
Unit - BOSS 0000 <gen> Is attacked
Conditions
Actions
Unit - Order BOSS 0000 <gen> to Undead Necromancer - Cripple (Attacking unit)
Use this idea as a basis for using spells..
Maybe turn a timer on once he get attacked and do Event - Timer Expires||Unit - Issue Order to do some kind of stunning spell or something.

Nackel's idea works just fine, unless you want to dive into AI programming.....yeah, it depends on how experienced you are with stuff like that.
Personally, i dont know a shit about it, only it is there.
So i would probably use nackel's version if you are fine with it being some simple stuff.
