How do a make a stall playstyle more fun?

I enjoy a small map like Booty Bay... Set up a choke point and build my forces.

But eventually around 30+ minutes the AI is tapped out of gold and i walk over an empty base.

TLDR: Whats the easiest way to increase the mine gold reserve for me and the AI?
