Changing destructible XYZ scales

You mean the model? It is a doodad (the waterfall), but I can't modify the height for some reason.
If the minimum and maximum height has the same number in the object editor you can't change its size. Change minimum or maximum scale to be able to alter its scale.

It's a destructible using a doodad model.

I'm trying to make a destructible that looks like a flat waterfall and there doesn't seem to be a "Destroy Doodad" trigger.
You can hide the doodad.

Or if you absolutely need to destroy it then just base it on an invulnerable locust unit.

Yeah, I'm resigning myself to the first one, which is bringing its own problems.
If you're talking about pathing issues then you can make the doodad itself have no pathing, then make it unpathable with pathing blockers. When you hide the doodad you simply kill the pathing blockers.
