Zerg having more researches than any other race?

Only a bad Z player would research every upgrade, considering that a bunch of them are specific to only one unit.

As for exact numbers, think its 9 for evo chamber, 2 for roach, 1 for blings, 2 for pool, 3 from lair, 6 from spire, 2 from infest pit, 1 from ultra den, 1 from hydra den. So 25 in total. Ofc, everything outside of the evochamber/spire/lair upgrades is pretty much only gotten if you are going for those units.

Its for ballence. Where as both protoss and terran need specific production structures, the zerg make all their units from larva which would make them increadiably rigged. Whereas switching from air to tanks takes a whole tech and building change to counter something like ultralisks which is game endingly expensive, the zerg just need to have the prequisit building (one copy) and then can spam as much of the unit as they like. To counter this they have a lot of unit specific upgrades, in an attempt to slightly emulate this adaptation process that other races go through.

Be aware however that the terran and protoss also have unit specific upgrades but usually they are tactical rather than major.

Protoss Air Weapons, Protoss Ground Weapons, Protoss Air Armour, Protoss Ground Armour, Plasma Shields (5)

Zerg Melee Weapons, Zerg Ranged Weapons, Zerg Air Weapons, Zerg Carapace, Zerg Air Carapace (5).

Terran Infantry Weapons, Terran Vehicle Weapons, Terran Air Weapons, Terran Infantry Armour, Terran Vehicle Armour, Terran Air Armour (6).

Terran have got 6 weapon/armor upgrades, like Poot mentioned, +6 upgrades at the Starport Tech Lab, +3 upgrades at the Factory tech lab, +4 upgrades at the Barracks tech lab, +2 upgrades at the Fusion Core, +3 upgrades at the Engineering Bay, +2 upgrades at the Ghost Academy... that makes 26 upgrades.
Zerg has 3 upgrades at their main building, +3 in the Evolution Chambers, +2 in the Spawning Pool, +1 at the Baneling Nest, +1 at the Hydralisk Den, +2 at the Infestation Pit, +2 at the Spire, +1 at the Ultralisk Cavern... that's 15 upgrades.
Terran have more upgrades than Zerg. And Protoss have 16.

That's correct if you see it that way.

The zerg though, have more specialized units. Propably because their buildings are for upgrades only. Since all units are spawned from Larva, the buildings don't have anything to do.

Zerg have the most general units. Terran have the most specialist units. This is reflected in both total unit count and total upgrade count, not to mention the fact that it's pretty damn obvious.

For example, Hellions are totally useless against any non-light unit. There is not a single Zerg unit that the same can be said about (or useless against non-armoured etc) unless you consider GtG vs Air units and vice-versa, which ever race has pretty equally.
