You can put the doodad in a region. Go to the "Animations" triggers and find the one that says play animations for doodads in region (or something like that) Then you can play the hide animation for the specific doodad in that region.
This will hide all the doodads of the selected type within the region and will not remove the pathing of them so I would suggest setting the pathing to none and using pathing blockers and removing them with the destroy destructible trigger.
I don't think you can add them unless you make them into a destructible in the object editor. Or you can place them in the map and 'hide' them at map initialization and then 'show' them when you want them to appear. (That's normally what I do) For instance if you want to show a building being built you can hide the building and show the framework, then when you want it to be finished you can hide the framework and show the building. I use this technique in my maps to make it seem like progress has been made over time.
