Stalkers are the Dark Templar versions of the Dragoon. Normal Protoss Dragoons have been replaced with Immortals.

As far as I can tell, dragoons were replaced with the colossus.
The colossus has the same fixed leg orientation as the dragoons had and is much bigger.
As such it might not be the direct replacement, however it shares many simalarities to dragoons.
Dragoons will probably be in SC2 as a choosable model, however they will not be in the beta.
