Ok, so I want to use the model for spirit walkers ethereal form. I realize certain units have multiple models, but don't know how to actually use the variations.

Golems also have different variations but I don't know how to use those either, can anyone help me out?

only models that actually transform have different models like druid of claw druid of talon, Illidian, which has 3 but you would not change them by playing different animations each model you would just need to change "Alternate Form Unit" and "Normal Form Unit" when making your custom ability. The ghost form of units i am not quite sure how to make them appear ghost-like but the golem variation is like what Neiko says and its just a color variation probably along with a scaling value difference
