I've just been wondering if it is possible to change what armor types do.. I know how to change what it says in game, like Hero armor, Fortified Armor and all that, but they all have different stats -- weaknesses and strengths. And i am wondering if can change their stats, what they are weak and stronger against.

Yes you can change that. Go to the gameplay constants, find the damage types (piercing, chaos, magic etc.). Double click for example piercing, and a screen will pop where you can change piercings damage ratio to every armor type. You can set for example piercing to do 200% dmg vs fortified etc.
