How do I change what a unit builds, eg : Peasant
And after changing what can a unit build, how do I make the building upgradable?

If i understand what u want.
First - click on peasant and go down, you have Techtree - Structures Build.
Second - Click on building and go down, there you have Techtree - Upgrades to
