Animation Issues!

Mmkay I am starting to get frustrated.
I am finally animating my model, as everything else is done. But there seems to be an issue.
For a portrait animation I was my bug's head to look up right, then up left, then back to how it was before.
It does most of this just fine.
It looks up and to the right.
Then it looks up and to the left.
Then the head spins around on its bone back to the start position.

I think I know what the problem is.
The rotation of the head on the key where he is looking up and to the left is:
-75.237, 132.958, -64.084
And all the other frames use positives on their rotations. But if I try to replace the -75.237 with 284.763 it automatically goes back to -75.237.

How am I supposed to animate it properly if pieces keep spinning around?!
How do I fix this?
