That, my friend is what they call "common misconception" and in some cases are done to simplify the models since making animations for something that holds its own head on its hand must be ridiculously annoying.
However, the "holding its own head" is one of the many versions of the dullahan. Sometimes they are depicted as simply headless, nacht.
To avoid massive off-topicness on your thread, here's the difference between the two:
Dullahans are mostly depicted as organic i.e. having flesh, skin and bone, basically an imposing human carrying his disembodied head.
Animated (or possessed) armors, on the other hand, are empty suits of armor given life by magic (or possessed by a spirit). They are empty, except if you count magical (or ghostly entity) inside.
