I would like to know where to find this wonderful tool that everybody uses to get the really cool models from WoW.

I myself use mdlvis from www.xgm.ru.
but beware: its russian but im able to work with it without beeing able to speak russian too
let's see, i'm thinking of writing a tutorial for it
