    I was horrible with triggers in wc3, but with this new GUI I can't do anything. Anybody know a tutorial?

    yep. Check the warcraft 3 tutorials and adapt them for the galaxy editor, most of the functions are equal to warcraft 3 functions

    Good point, but I can't even use GUI. I'm trying to set up a trigger that gives 100 minerals to player 1 at map initialization and I have no idea what to do.

    Create a trigger in the trigger editor (CTRL+T), add the event (CTRL+E) Map Initialization, the event is what has to happen for the trigger to run. Now you can add an action (CTRL+R), for adding minerals you want to use 'Modify Player Property', then choose what property to change, in this case minerals, and select to either 'add' or 'set' them to a value of 100.
