I don't think that's actually possible. My guess is the only way to do it is by using custom made shadow textures on an invisible dummy unit.

I meant ground textures... just checked back

Well, you can't make additional ground textures than the ones provided by Wc3. So the only way is to replace existing ground textures with what you want by replacing the paths in import manager.
Do note that ground textures only works on buildings.
