Model vs. performance

So I was trying to finish my little campaign and as I hated design of some of the original Warcraft 3 models, I replaced them with different ones, which have usually larger polycount, complicated animations, more textures, etc.... I would like to ask what should I look for to keep game performance clean? What is the largest FPS eater? Is it the actual size of the model, or number of vertices, or? Thanks in advance.
