How to make a unit not be autoattacked?

You could try to add "ward" under "combat - targeted as" in the object editor, without actually changing its classification.

Also armor type fortified makes it so that the unit will be targeted with the least priority.
 
Units summoned by the Mechanical Critter ability are not auto-attacked.

However, this ability has many limitations; it doesn't summon a specific unit type, but a random unit of the Critter race; you would have to change the "Stats - Race" field of all critters (Pig, Chicken, Dog, Frog, Stag, Rat, Rabbit, etc.) to something else (e.g. "None") and then change the same field of the unit you wish to be summoned to "Critter".

This is not suitable if you need it for more than one unit type because the unit type is randomly chosen (depending on the "Editor - Tilesets" field) and will also break the standard Mechanical Critter item.
