How to change the effect for Undead Summon

That shouldn't be hard to do with model edits; but that's more a model-related question than texture related, as most spell effects are assigned their coloration from data fields in the model rather than from the textures themselves.

I'd recommend using a wc3 modeling program and open the model you are talking about (the building animation for both night elves and undead have a stand alone model, though you'd need to replace the building art with triggers). Then look at the textures it uses. If any of them are exclusively green you could edit those skins and change them to the colors you want, if their white you'll need to change their coloration in the model itself.
