I don't think there is a way to edit/modify the chat messages. IMO, hide the default chat message system and use something else. e.g. a multiboard or game - display text messages. That way, you'll have full control. See: http://www.thehelper.net/threads/how-to-hide-entered-chat-messages.43141/
Chat messages? As in the messages that get typed and then displayed on screen? As far as I know it is not possible to change that unless the player type in a color code for their text.
Anyway, here is a concise tutorial on creating custom colored texts. Hope it will help in some way, given the fact that I cannot understand your issue well enough.
