Is it possible to

1. Remove its exploding when it reaches 0 gold

2. Keep the peasants mining even the gold mine has 0 gold but the peasants can only gather half (5)

I don't think any of the are possible.

1 & 2: The mining ability of the mine will not function when the mine reaches 0. You would have to simulate the gold mining process via triggers.

Or use max life.

You can gather from goldmines even if their gold amount is 0. That only works for entangled goldmines and haunted goldmines though.

So if you decide to use entangled goldmines or haunted ones, you would still need to trigger the gold income yourself like Bribe said.
