how do people get colored text for their titles during game download and for some units in game?

There are specific coloured texts for each colour.
Search the tutorials and you may find one that explains colour codes.

It is basically starting with |cf and then the original color code (I look for them at photoshop for example), next you add the text you want in color and end with |r. For example if you want orange:
