You want to change the description ingame?
Not possible, unless some jass function can do it.

Just do another unit which is the knight with another text and make the barrack able to produce both then make in map initialization the second knight impossible to produce then when you want to have the second tool tip make the first impossible to produce and the second possible to produce.
