I was looking at various campaigns and they simply limit the space the hero and the boss can traverse during a battle or do nothing at all, but I really don't like those ideas. What if boss fights are actually their own maps, such that everything is set up properly. I understand that this might increase the campaign size quite a bit, but I believe this would make that up in campaign quality

Sure, I mean, at the end of the day, what is comes down to is development time and how many resources one is willing to commit to making the final boss worth the effort. You are welcome to make a final boss map, but imagine the effort needed in order to make the boss seem climactic throughout a map and not boring:

1) Terrain - is it stationary or is the boss ripping up ground?
2) Hiding - are you engaging with the boss the whole time or are you dodging him and trying to remain unseen?
3) Weaknesses - this has to be a central point to requiring the boss fight be an entire map. Maybe the hero has to collect some "ultimate items" in order to defeat the boss.
