Im corrently making a map with attachments of items to my units.

I'm not finding alot of units who wield no weapon / helm and therefor i wanted to ask - can normal warcraft units be removed of their weapons without modeling them ?

No, it isnt possible.
Opening the model in a model editor and removing his weapon is the only way.
