Reseting Research Levels

I'm adding a rematch system to my map and I was wondering how to make it so that the Attack/Defense upgrades are at level 0 again. How do I do this?

It's impossible, you can't undo techs. There is an action/function to set the research level of any tech, but it only works if you set it to a higher level than the current.
