I know that there is a section for this, but I am wondering what people here actually use and what they would definitely recommend everyone else to use (and why).

Currently simply using nothing but classic world editor and Jass craft / blizzard.j to find needed Jass functions.

Am I missing out here?
 
I'll definitely check out jngp - is it recommended to use that 2.0 beta version?

And I will also check out the list Dane mentioned, let's see if I want something cool :)

JassCraft is the best Jass tool I know for writing Jass.

For modelling on wc3 modding level I recommend Magos and Mdlvis.

For skinning I recommend Warcraft Viewer to quickly preview a skin ( the only tool being able to do it).

For icons, GIMP and the Button Manager for wc3 shaped icon borders.
