Well a model is a 3d object (can be 2d) such as a grunt but a model does not have all the texture it is just white so just imaging a grunt that is just white. That is a model. You can animate it so if it dies then it jumps into the air does a dance and falls on the floor if you wanted. The skin is just a layer that you put on the model to make it look like a gunt. You can extract skins from units and edit them and make them look different.
For importing skins you first need to know the path of the skin. There are plent of tutorials on www.wc3campaigns.com that can help you there.
To import skins, you import the .blp via import manager and add the path. The page you downloaded the skin should include the path but if not, find the base skin yourself by searching it through the categories of the mpq.
