Etales ORPG is an enjoyable RPG that can be nearly completed singe player, except the ( two) last bosses. It has many different classes and interesting quests.

Dwarven Monster slayers is also enjoyable in single player, though rather aiming for multi player.

Maybe check out MineralZ, too, though I myself don't like the Warcraft version.
