UV mapping is the process of saying what part of the model goes where on the texture. You can look at the UV map using vertex modifier on this page. The first two or so tutorials on that page will tell you how to get the model open.
Go to www.oinkerwinkle.com and read his "modeling from scratch" tutorial, I believe his program is by far the easiest way to do easy-moderate UV mapping. It isnt quite precise enough for models with a ton of polys, but it is good for the average kind of model you will run into.
