I want to change the race name in Warcraft 3. For example I want to change the human into something else.

How to change the race name?

Open Advanced->Game Interface. Scroll down to Text - General and find the two places where it says Human. Then make sure to mark the "Use Custom Game Interface" box in the upper left corner of the window. After that you just double click on the field that says Human and change the text to whatever name you want your new race to have.
As far as I can remember that's the only place that reveals the race names in game. It's right before you start when you can select your race.
