How do you remove inventory hotkeys for items?

You know when you create an item, and check TRUE for 'Actively Used' (so that it's clickable),

Well..

Ingame, depending on which slot the item is in your inventory, it will show Numpad #

Any way to remove that 'Numpad #' from the description of the item ?

You can change that text in 'Game Interface' (Tab 'Advanced'). There's a field that says "Text - General - %s (|cfffed312NumPad %u|r)", check 'Use Custom Game Interface' and double click that.
