Definitely a little stony, and isn't the colors too light to be gingerbread?
But this was a lovely idea, more decor should be added imo, ones that would match the team color, and to give it that tasty look.

those stony cracks show how crispy is him, like a normal cookies but slightly light brown

Yes but you also need to reduce that filter look more. You applied too much grain filter on it which also washed away the stronger highlights from the texture. Try to fix that aeman.

Changing my rating. This one might not be the gingerbread (perhaps ginger dread?) giant but it surely fits to some Native American-Easter Island golem/elemental.
