It's kinda related to the ginger used in our food, however it refers to its flowers, which is orange to red in color. ^^
I have no idea where that gingers eat souls kind of thing came from tho.
Apparently for each freckle on a ginger represents each soul that that person has eaten(from what I've heard).
Although for me I'm a ginger without freckles so I guess I still haven't discovered my power.

I'm not sure, but I remember reading something in the net, about a "ginger" girl killing herself because her classmates? Are picking on her.
I think it can be used to insult you if the color of your hair is different from the other people. Like for example, at school: common students have black hair, and yours is red, you'll probably get picked by them.
EDIT:
Base on scientific studies, red-haired people are more sensitive to physical pain. That means punching them will make them feel more painful than black/blone/brown-haired peeps feel.
