One of my favorites is VLC (Video player). It does not require codecs and plays nearly any thinkable format.

Envy is a very handy tool that makes it really easy to install the latest ATI or nVidia video card drivers that aren't normally available in repositories. There are times when you'll want the newest driver (*cough* ATI *cough*) instead of the one already supplied. You'll need to install this from the Envy site.

A program I've had fun with is Kiba-Dock. It's a dock program which is very similar to the OSX dock. However, it's customizable to allow it to handle various other plugins and even has its own physics system for those who would enjoy the extra eye-candy/enjoy throwing their application launchers around the screen. However, a composing windows manager such as compiz fusion or beryl is required. You can read on the Kiba-Dock site on how to install this since it isn't normally in repositories by default.

You may have already heard of it, but I'll mention this just in case. Wine is a "windows compatibility layer" which basically will allow you to run some Windows programs on non-Windows operating systems. I'd like to point out however that Wine is still in heavy development and not all programs will work in Wine and Wine updates may even stop Wine from working for programs which it worked for in older versions.

Compiz Fusion is another common program. This allows you to get all those flashy effects you may have seen advertised in youtube videos. It is beginning to be installed by default in newer Linux distributions (though you'll probably still have to enable all the extras).

Envy and Compiz-Fusion are definitely must-haves, and I'd also reccomend Amarok, a very nice music player.
