I was playing a custom game and what I notice was the name of the races was changed. The list of choosing orc, human, night elves and undead were renamed and colorized. Can any one help answer as to how this was done and is it possible add addition ones within the list?

I don't know exactly how it's done but you must be aware of one thing. The name of the races change AFTER the game, so lets say you play your map and you change every races to Lol, Lol2, Lol3 and Lol4, players that join your game will see Human, Orc, Undead... etc but if they play any game after yours ( let's say Footmen ) they'll see Lol, Lol2, Lol3, Lol4 and such.

So to be effective, players must play your game more than once or it's not going to show up in your game.

Open the "Advanced" tab located in the upper toolbar of your World Editor, then select "Game Interface" scroll down untill you see "Text - General - Human" and change that field value to the name of whichever race you'd like it to be. You can do the same to change "Text - General - Orc" and the other fields for Night Elf and Undead as well.

When looking around in Game Interface you'll also find ways to change the icons for Gold, Lumber, Food as well as the text to edit them, among many other fields. You can even change the User Interface from that screen.
