How can I change the pitch/angle of a unit?

Open the unit in the object editor, and modify the following fields to these values:
Art - Maximum Pitch Angle (degrees): -90.00
Art - Maximum Roll Angle (degrees): 0.00

The roll can actually be whatever you want. I just usually set it to 0. The pitch angle can also be whatever you want, -90 degrees makes them parellel to the ground, face flat. You have to hold down shift, and then double click (or press enter) on the object editor field before modifying it.

Also, make sure that if you go to File -> Preferences -> General that Allow Negative Real Values in the Object Editor has a checkmark.

If you want to control the unit's elevation, you can set their movement type to hover or fly and increase the movement height. (and the minimum movement height) :)
